A tasty chewy brownie crust to go under any baked treat you can dream up.

Ingredients

  • 1/2 avocado mashed
  • 3/4 cup Erythritol
  • 2 flax eggs
  • 1 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/2 cup cocoa powder
  • 3/4 cup spelt flour

Instructions

  1. Preheat oven to 350 degrees. 

  2. Prepare flax eggs in a small bowl and let stand for about 5 minutes. 

  3. Place avocado in a large mixing bowl. Mash. 

  4. Stir in the flax eggs, Erythritol, vanilla, baking powder and cocoa powder into the avocado. Whisk to combine. 

  5. Add the flour to your mixture. Switch to a wooden spoon and stir to combine. 

  6. Place the batter into a lightly greased (with EVOO) 9×9 pan and bake for 24-27 minutes. The brownies should start to pull away from the sides of the pan and be springy when touched. A toothpick will come out clean. 

  7. Remove from oven and place pan on a rack to cool.

Recipe Notes

1 flax egg = 2 Tbsp ground flaxseed meal + 3 Tbsp water
