Date Syrup


  • 1 cup pitted dates
  • 1 cup boiling water
  • 1 Tbsp blended lemon *See note


Combine the dates and hot water in a heat-proof bowl and set aside one (ish) hour to soften. Transfer the dates and the water to a blender (or food processor). Add the lemon cube and blend until smooth. Transfer into a glass jar or other airtight container and store in refrigerator up to 3 weeks.

Note: Instead of cooking with lemon or lime juice/concentrate, peel and blend up the whole fruit and then freeze it in ice cube trays. Once frozen, empty the tray into a freezer bag. 1 cube ≈ 1 tablespoon
