Vegan Quesadillas

 

Quesadilla sin Lácteos (Vegan Quesadillas)

Delicious quesadilla goodness created without dairy products. The cheesy filling in these is made from chickpeas (garbanzo beans) seasoned with nutritional yeast (what the kids call "nooch") and other seasonings.

Ingredients

  • 2 cans chickpeas drained, but un-rinsed
  • 1 can diced tomatoes salt-free
  • 4 tbsp nutritional yeast
  • 2 tsp white miso paste
  • 2 tsp tahini
  • 2 tsp garlic powder
  • 2-3 shakes cumin
  • 2 tsp ancho chili pepper, ground
  • 2 tsp adobo
  • 2-3 tsp espazote
  • 1 cup chopped kale

Instructions

  1. Put all of the ingredients into the food processor and pulse into a thick paste. (If it's too thick, add a tsp of water at a time until you reach a spreadable consistency.)

  2. Spread onto corn (or whole wheat) tortillas and drop another tortilla on top (tortilla sandwich style).

  3. Place onto a hot griddle, flipping occasionally, until the tortillas are as brown as you'd like.

  4. Serve warm, with salsa and lettuce.
